A quick and delicious vegetable fried rice recipe perfect for a fast weeknight dinner or lunch. Packed with colorful vegetables and savory flavors, ready in just 15 minutes.
Ingredients
Rice and Vegetables
2cupscooked jasmine rice
1cupbroccoli florets
1cupfrozen mixed vegetables(peas, carrots, corn, green beans, lima beans)
1green oniongreen part, finely chopped
3clovesgarlic, minced
2largeeggs, beaten
2tablespoonsvegetable oil(or any neutral oil)
1.5tablespoonsregular soy sauce
2tablespoonsdark soy sauce
½tablespoonsesame oil
⅛teaspoonwhite pepper or black pepper
Instructions
Heat 1 tablespoon (15 ml) vegetable oil in a large pan over medium-high heat. Fry scallion whites and garlic until fragrant, about 10 seconds.
Add broccoli and mixed vegetables; stir-fry for 1-2 minutes until vibrant. Push to the side of the pan.
Add remaining oil and beaten eggs to the empty side; let set for 10 seconds, then scramble. Break into chunks and mix with vegetables.
Add rice, soy sauces, sesame oil, and pepper; toss until evenly coated. Mix in scallion greens and serve.
Notes
Use day-old rice for best results and quick stir-frying.
