A quick and delicious breakfast featuring creamy avocado and a perfectly poached egg on toasted whole-grain bread.

Ingredients

Bread

  • 1 slice whole-grain bread

Avocado

  • 0.5 ripe avocado ripe avocado

Egg

  • 1 large egg large egg

Vinegar

  • 1 teaspoon vinegar (for poaching)

Salt

  • to taste Salt to taste

Black Pepper

  • to taste Black pepper to taste

Red Pepper Flakes

  • a pinch optional Pinch of red pepper flakes (optional)

Instructions 

  • Toast the bread until golden brown.
  • Simmer water with vinegar, crack egg into bowl, swirl water, then slide egg in. Cook 3-4 min, then remove.
  • Mash avocado onto toast, season with salt and pepper.
  • Place poached egg on top of avocado.
  • Sprinkle with red pepper flakes if desired. Serve immediately.

Notes

Use fresh eggs for best poaching results.
