Ingredients

dry ingredients

  • 1 cup almond flour (adds moisture and a subtle nutty flavor)
  • 1 cup all-purpose flour (for structure and softness)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

wet ingredients

  • 1 cup granulated sugar (just enough sweetness without overpowering)
  • 1/2 cup extra virgin olive oil (gives richness and a lovely fruity aroma)
  • 3 large eggs (for structure and moisture)
  • 1/2 cup freshly squeezed orange juice (for bright, tangy citrus flavor)
  • 1 zest of 1 orange orange zest (packs an extra punch of citrus)
  • 1 teaspoon almond extract (for a warm, nutty depth)

Instructions 

  • Preheat oven to 350°F (175°C). Grease and flour a cake pan.
  • In a bowl, whisk together almond flour, all-purpose flour, baking powder, baking soda, and salt.
  • In another bowl, beat eggs with sugar, orange juice, orange zest, olive oil, and almond extract until well combined.
  • Gradually add dry ingredients to wet ingredients, mixing until just combined.
  • Pour batter into prepared pan and bake for 40 minutes or until a toothpick inserted in the center comes out clean.

Notes

Allow the cake to cool before dusting with powdered sugar and serving.
