A moist and flavorful cake combining fresh strawberries and almonds, perfect for a delightful dessert or special occasion.

Ingredients

Dough

  • ½ cup unsalted butter (room temperature)
  • ¾ cup granulated sugar
  • 2 eggs eggs (room temperature)
  • ½ cup Greek yogurt (room temperature)
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • ½ cup almond flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup strawberries, chopped (folded into batter)
  • ¾ cup strawberries, halved (for topping)
  • ½ cup sliced almonds (for topping)

Topping & Garnish

  • powdered sugar (for dusting)

Instructions 

  • Preheat oven to 350°F (175°C). Grease or line an 8-inch springform pan.
  • Cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in yogurt and vanilla.
  • Sift together flour, baking powder, baking soda, and salt; fold into wet ingredients with almond flour. Gently fold in chopped strawberries.
  • Pour batter into pan, arrange halved strawberries on top, and sprinkle with sliced almonds. Bake for 50-55 minutes.
  • Cool slightly, dust with powdered sugar, and serve.

Notes

Store leftovers covered at room temperature for 1-2 days for best freshness.
