Ingredients

Batter

  • 1 large egg
  • 2 tbsp salted butter, melted
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 2 tbsp greek yogurt or sour cream
  • 1 cup milk (regular or almond)
  • 1 1/4 cup all purpose flour or gluten free flour
  • 2 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 small apples, peeled and diced

Apple topping

  • 1 small apple, peeled and diced
  • 2 tbsp salted butter
  • 2 tbsp dark brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tbsp cornstarch
  • 1/2 tbsp water

Instructions 

  • Cook diced apples with butter, brown sugar, and cinnamon until soft and bubbling, then thicken with cornstarch mixture.
  • Mix egg, melted butter, sugar, vanilla, and sour cream; fold in flour, baking powder, baking soda, and diced apples. Rest batter for 30 minutes.
  • Heat skillet over medium, add butter, and cook batter in ⅓ cup portions until bubbles form; flip and cook until golden.
  • Prepare apple topping by cooking apples with butter, sugar, cinnamon, then thicken with cornstarch mixture.
  • Serve pancakes topped with warm apple filling and optional maple syrup.

Notes

For extra flavor, add a sprinkle of cinnamon or a drizzle of maple syrup.
