Instructions
Cook diced apples with butter, brown sugar, and cinnamon until soft and bubbling, then thicken with cornstarch mixture.
Mix egg, melted butter, sugar, vanilla, and sour cream; fold in flour, baking powder, baking soda, and diced apples. Rest batter for 30 minutes.
Heat skillet over medium, add butter, and cook batter in ⅓ cup portions until bubbles form; flip and cook until golden.
Prepare apple topping by cooking apples with butter, sugar, cinnamon, then thicken with cornstarch mixture.
Serve pancakes topped with warm apple filling and optional maple syrup.
Notes
For extra flavor, add a sprinkle of cinnamon or a drizzle of maple syrup.
