Instructions
Preheat oven to 350°F (175°C). Line a 12-cup muffin pan.
Mix dry ingredients in a large bowl. Whisk eggs, applesauce, honey, oil, and vanilla until smooth.
Fold in grated apple and carrot. Combine wet and dry ingredients until just mixed.
Scoop batter into muffin cups, filling about ¾ full. Bake for 20-25 minutes.
Cool muffins in pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For extra flavor, add a pinch of ginger or nutmeg.
