Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 0.5 teaspoons salt

Wet Ingredients

  • 0.5 cup unsalted butter
  • 0.5 cup brown sugar, packed
  • 0.25 cup granulated sugar
  • 2 large eggs
  • 0.5 cup sour cream
  • 0.33 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Additional Ingredients

  • 2 cups peeled apples, diced
  • 0.5 cup brown sugar
  • 0.75 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 0.25 cup unsalted butter, softened

Instructions 

  • Preheat oven to 425°F (220°C). Line muffin pan with liners or grease.
  • Mix dry ingredients: flour, baking powder, baking soda, cinnamon, salt.
  • Cream butter and sugars; add eggs, sour cream, applesauce, vanilla. Mix well.
  • Combine wet and dry; fold in diced apples. Prepare topping mixture and sprinkle on batter.
  • Bake at 425°F (220°C) for 5 minutes, then reduce to 350°F (175°C) and bake 15-18 minutes. Cool and serve.

Notes

For best results, do not overmix the batter to keep muffins light and fluffy.
