Ingredients

Muffin Batter

  • 1.5 cups all-purpose flour (spooned and leveled)
  • 0.5 cup granulated white sugar
  • 0.5 cup packed brown sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon salt
  • 0.33 cup vegetable or canola oil
  • 1 large egg
  • 0.33 cup milk
  • 2 large apples (peeled, cored, chopped)

Streusel Topping

  • 0.25 cup granulated white sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons cold butter (cut into small cubes)
  • 1 teaspoon ground cinnamon

Instructions 

  • Preheat oven to 400°F (200°C). Grease or line a 12-cup muffin tin.
  • Mix flour, sugars, baking powder, cinnamon, and salt in a large bowl.
  • Add oil, egg, and milk; stir until just combined. Fold in chopped apples.
  • Divide batter into muffin cups, filling about ¾ full. Prepare streusel by combining sugar, flour, cinnamon, and cold butter until crumbly.
  • Sprinkle streusel over muffins and bake for 18-20 minutes. Cool slightly before serving.

Notes

Use cold butter for a crunchy streusel topping.
