Delicious and healthy Asian-style ground beef lettuce wraps, perfect for a quick meal or appetizer.

60mlmaple syrup(or brown sugar, or coconut sugar)
60mlcoconut aminos(or tamari, or soy sauce)
10mlrice vinegar
15mltoasted sesame oil
1tspred pepper flakes(optional)
10garrowroot powder(or cornstarch)
Filling
15mlolive oil
450gground beef
2clovesgarlic(minced)
10gfresh ginger(grated)
1mediumred bell pepper(finely diced)
50gshredded carrots
4wholegreen onions(sliced into 1” pieces)
Seasoning
kosher salt(to taste)
ground pepper(to taste)
sesame seeds(to taste, for garnish)
boston bibb lettuce
steamed white rice or sauteed cauliflower rice(optional, for serving)
Instructions
Make the sauce by whisking maple syrup, coconut aminos, rice vinegar, sesame oil, and red pepper flakes. Add arrowroot powder and whisk until combined.
Heat olive oil in a skillet over medium-high heat. Add ground beef and cook until no longer pink, about 5 minutes.
Add garlic and ginger, cooking until fragrant, about 1-2 minutes.
Add bell pepper and carrots, cooking until tender, about 3-4 minutes.
Pour sauce over skillet contents, stir, and simmer until thickened, about 2-3 minutes. Season with salt and pepper.
Stir in green onions and spoon filling into lettuce wraps. Garnish with sesame seeds.
Notes
Serve with steamed rice or cauliflower rice for a complete meal.
