A delightful dessert combining baked tart apples, crunchy streusel, and creamy cinnamon topping, perfect for cozy autumn evenings.

Ingredients

Streusel topping

  • 80 g soft butter
  • 125 g flour
  • 40 g sugar
  • 1 packet Bourbon vanilla sugar (or regular vanilla sugar)

Apple compote

  • 3 pieces apples (firm, tart apples like Granny Smith or Braeburn)
  • 1 pcs lemon (juice of one lemon)
  • 1 stick cinnamon (cinnamon stick)
  • 1 star anise (star anise)
  • 100 ml orange juice
  • 1 drop bitter almond oil (optional)
  • 2-3 tbsp brown sugar (adjust depending on apple sweetness)

Cinnamon cream

  • 250 g quark (or Greek yogurt)
  • 200 ml cream (whipped)
  • 50 g powdered sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract (or Bourbon vanilla sugar)

Instructions 

  • Mix butter, sugar, vanilla sugar, and flour; bake at 175°C for 15 minutes until golden. Cool.
  • Peel, core, and chop apples; toss with lemon juice. Roast with cinnamon, star anise, orange juice, almond oil, and brown sugar for 20–25 minutes. Cool and refrigerate.
  • Whip cream; mix quark with powdered sugar, cinnamon, and vanilla. Fold in whipped cream. Chill.
  • Assemble by layering cinnamon cream, baked apples, and streusel in glasses. Garnish with toasted almonds or cinnamon. Serve immediately or chill.

Notes

For extra flavor, sprinkle with toasted almond flakes or additional cinnamon before serving.
