  • 1 piece avocado
  • 4 pieces rice paper wrappers
  • 1 large carrot
  • 0.5 cucumber cucumber
  • 0.5 cup cooked rice noodles
  • 0.25 cup mint
  • 0.25 cup basil (thai basil is best!)
  • 0.5 cup Thai Peanut Sauce (store bought)
  • 0.25 cup creamy peanut butter
  • 3 tbsp soy sauce
  • 1 tbsp lime juice
  • 0.5 tsp minced ginger
  • 0.5 tsp minced garlic
  • 2 tbsp sriracha

Instructions 

  • Slice the avocado, carrot, and cucumber into thin strips.
  • Soak rice paper in warm water until pliable, then fill with avocado, vegetables, herbs, and noodles. Roll tightly.
  • Repeat with remaining wrappers and fillings.
  • Mix peanut butter, soy sauce, lime juice, ginger, garlic, and sriracha to make the sauce.
  • Serve spring rolls with peanut ginger sauce for dipping.

Notes

Use fresh herbs for best flavor and consider adding a splash of water to thin the sauce if needed.
