Ingredients

Bread

  • 2 slices whole-grain or multigrain bread

Avocado

  • 1 ripe avocado

Eggs

  • 2 large large eggs

Lemon Juice

  • 1 teaspoon lemon juice

Salt and Pepper

Optional Toppings

  • chili flakes, chopped parsley, cherry tomatoes, microgreens Optional toppings

Instructions 

  • Mash the avocado with lemon juice, salt, and pepper.
  • Toast the bread slices until golden.
  • Poach the eggs in simmering water for 3–4 minutes.
  • Spread mashed avocado on toast, top with poached eggs, and add optional toppings.
  • Enjoy immediately with optional drizzles or extras.

Notes

For extra flavor, drizzle with olive oil or balsamic glaze, or add smoked salmon or feta for a richer taste.
