1/2cupoil packed sun-dried tomatoes, chopped
1/2cupshredded gouda cheese
1/4cupgrated parmesan cheese
1cupshredded fontina or provolone cheese
Instructions
Preheat oven to 425°F. Toss squash, shallot, garlic, oregano, chili flakes, salt, and pepper; roast 20-25 minutes.
Puree roasted vegetables and ricotta. Cook pasta until al dente, then mix with pureed mixture, milk, spinach, sun-dried tomatoes, and cheeses. Top with fontina and bake until melted, 15-20 minutes.
