Start your day with these creamy, nutritious baked breakfast bowls packed with blueberries and cottage cheese, perfect for a wholesome morning treat.

Ingredients

Dairy

  • 1 cup cottage cheese preferably full-fat for creaminess
  • 2 large eggs
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries plus extra for topping
  • 2 tablespoons sliced almonds optional for topping

Instructions 

  • Preheat oven to 350°F (175°C). Grease two small ramekins or oven-safe bowls.
  • Whisk together cottage cheese, eggs, honey or syrup, and vanilla until smooth.
  • Mix in oats, baking powder, and salt. Gently fold in blueberries.
  • Divide mixture into ramekins, top with almonds and extra blueberries, then bake for 25-30 minutes.
  • Let cool briefly, then sprinkle cinnamon if desired and serve warm.

Notes

For extra flavor, add a dash of cinnamon before serving.
