Instructions
Preheat oven to 200°C (400°F). Line a tray with parchment.
Toss tomatoes, asparagus, garlic, salt, and pepper with olive oil on the tray.
Dry cod fillets, brush with olive oil, season with Cajun spice, salt, and pepper.
Place cod on tray, top with butter, and bake for 10-12 minutes until flaky and opaque.
Serve with vegetables, lemon wedges, and parsley. Drizzle pan juices and squeeze lemon over cod.
Notes
Ensure not to overcook the cod for best flakiness and flavor.
