A flavorful and healthy baked cod dish with Cajun spices, roasted vegetables, and fresh lemon.

Ingredients

Protein

  • 4 fillets Cod Fillets (approx 150g each)
  • 1/2 tbsp Extra Virgin Olive Oil
  • 2 tbsp Cajun Seasoning
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper
  • 3 tbsp Unsalted Butter (thinly sliced)
  • 1 lemon Lemon (sliced into 4 wedges)
  • 250 g Baby Plum Tomatoes (halved)
  • 200 g Fine Asparagus (woody ends removed)
  • 2 cloves Garlic (finely diced)
  • 1 tbsp Extra Virgin Olive Oil
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper

Garnish

  • finely diced Fresh Parsley (to serve)

Instructions 

  • Preheat oven to 200°C (400°F). Line a tray with parchment.
  • Toss tomatoes, asparagus, garlic, salt, and pepper with olive oil on the tray.
  • Dry cod fillets, brush with olive oil, season with Cajun spice, salt, and pepper.
  • Place cod on tray, top with butter, and bake for 10-12 minutes until flaky and opaque.
  • Serve with vegetables, lemon wedges, and parsley. Drizzle pan juices and squeeze lemon over cod.

Notes

Ensure not to overcook the cod for best flakiness and flavor.
