A flavorful and healthy baked cod dish infused with lemon, garlic, and spices, perfect for a quick dinner.

Ingredients

Protein

  • 1.5 lb Cod fillet pieces ((4-6 pieces))
  • 1/4 cup chopped fresh parsley leaves
  • 5 tbsp fresh lemon juice
  • 5 tbsp extra virgin olive oil
  • 2 tbsp melted butter
  • 5 cloves garlic cloves ((minced))
  • 1/3 cup all-purpose flour
  • 1 tsp ground coriander
  • 3/4 tsp sweet Spanish paprika
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix lemon juice, olive oil, and melted butter. Set aside.
  • Combine flour and spices in a bowl. Pat fish dry, dip in lemon mixture, then coat with flour mixture.
  • Heat oil in skillet, sear fish 2 minutes per side, then transfer to oven.
  • Add garlic to remaining lemon sauce, drizzle over fish, bake 10 minutes, then garnish with parsley.

Notes

Serve immediately with a side of vegetables or rice.
