Instructions
Preheat oven to 400°F (200°C).
Line a baking sheet with foil and spray with non-stick spray. Place cod and season with paprika, salt, and pepper.
Bake for 22-25 minutes until fish reaches 145°F (63°C).
Mix mango, red pepper, green onions, cilantro, and lime juice to make salsa.
Top each baked filet with mango salsa before serving.
Notes
For extra flavor, add a pinch of chili flakes to the salsa.
