A light and flavorful dish featuring tender baked cod topped with a fresh, tangy mango salsa.

Ingredients

Protein

  • 4 filets cod filets (frozen or fresh)
  • 1 teaspoon paprika
  • salt and black pepper to taste salt and black pepper

Produce

  • 1 each mango (peeled and diced)
  • 0.25 cup red pepper (diced)
  • 1 tablespoon green onions (chopped)
  • 1 tablespoon fresh cilantro (minced)
  • 1 tablespoon fresh lime juice

Instructions 

  • Preheat oven to 400°F (200°C).
  • Line a baking sheet with foil and spray with non-stick spray. Place cod and season with paprika, salt, and pepper.
  • Bake for 22-25 minutes until fish reaches 145°F (63°C).
  • Mix mango, red pepper, green onions, cilantro, and lime juice to make salsa.
  • Top each baked filet with mango salsa before serving.

Notes

For extra flavor, add a pinch of chili flakes to the salsa.
