A healthy and flavorful dish featuring tender baked cod served with nutty wild rice and sautéed zucchini, perfect for a nutritious meal.

Ingredients

Protein

  • 4 fillets cod fillets

Grains

  • 1 cup wild rice
  • 2 cups water

Oils & Fats

  • 1 tablespoon olive oil
  • 1 tablespoon butter

Vegetables

  • 2 zucchinis zucchinis, sliced
  • 1 lemon lemon, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt Salt
  • Pepper Pepper

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cook wild rice in boiling water for 45 minutes, then fluff and set aside.
  • Place cod on a baking sheet, drizzle with olive oil, season, and top with lemon slices. Bake for 15-20 minutes.
  • Sauté garlic in butter, add zucchini, season, and cook until tender, about 5-7 minutes.
  • Serve rice topped with baked cod and sautéed zucchini, garnished with parsley.

Notes

Ensure not to overcook the fish for best texture.
