Ingredients

Sauce ingredients

  • 2 tablespoons honey
  • 2 teaspoons soy sauce
  • 2 cloves garlic - minced or grated
  • 1 tablespoon juice from 1/2 lemon (or apple cider vinegar as substitute)
  • 0.5 teaspoon onion powder
  • pinch salt
  • 1 teaspoon smoked paprika
  • 2 teaspoons olive oil
  • pinch black pepper

Main ingredients

  • 2 filets wild caught salmon - cubed (individually sized)
  • 1 tiny sweet potato (about 2 cups worth)
  • ~12 heads brussels sprouts (halved)
  • 1 tablespoon oil (divided)
  • 1 teaspoon salt (divided)
  • 1 teaspoon garlic powder (divided)

Toppings and grains

  • cooked grain of choice cooked grain of choice
  • to taste fresh chopped parsley (for topping)
  • to taste sesame seeds (for topping)

Instructions 

  • Preheat oven to 425°F (220°C).
  • Mix honey garlic sauce, marinate salmon for 15 minutes.
  • Toss sweet potato and Brussels sprouts in oil, salt, garlic powder. Roast for 25 minutes.
  • Add salmon to the sheet and roast for 5-8 minutes until cooked.
  • Remove skin, serve with grains and toppings.

Notes

Ensure salmon is cooked through and serve with optional toppings for added flavor.
