Enjoy these healthy and delicious baked oatmeal cups, perfect for a quick breakfast or snack.
Ingredients
Wet ingredients

Coconut oil, melted
(to grease the pan, or other cooking oil)

Old-fashioned rolled oats

Peanut butter
(or other nut butter)

Maple syrup
(or honey, agave nectar)

Pure vanilla extract

Ground cinnamon

Greek yogurt
(or your favorite type of yogurt)

Instructions
Preheat oven to 350°F (175°C) and grease a muffin tin.
Mix oats and cinnamon. In another bowl, combine peanut butter, maple syrup, vanilla, and yogurt.
Combine wet and dry mixtures. Scoop into muffin tin, filling ¾ full.
Add desired toppings on each cup.
Bake for 20-25 minutes. Cool slightly before serving.
