Delight in these soft, spiced pumpkin donut holes baked to perfection and coated in cinnamon sugar for a sweet treat.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour (spooned & leveled)
  • 2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup pumpkin puree (NOT pumpkin pie filling)
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup unsalted butter (melted and slightly cooled)
  • 1 teaspoon vanilla
  • 6 tablespoons unsalted butter (melted and slightly cooled)
  • 3/4 cup granulated sugar
  • 1 1/2 tablespoons ground cinnamon

Instructions 

  • Preheat oven to 350°F (175°C). Spray mini muffin pan with non-stick spray.
  • Mix dry ingredients in a bowl. In another bowl, combine wet ingredients until smooth.
  • Combine wet and dry mixtures until just blended. Fill muffin cavities 3/4 full.
  • Bake for 11-13 minutes until a toothpick comes out clean. Cool for 5 minutes.
  • Melt butter, mix cinnamon and sugar. Dip donut holes in butter, then coat in cinnamon sugar.

Notes

Ensure not to overmix the batter for tender donut holes.
