A creamy, flavorful baked chicken dish with sun-dried tomatoes, spinach, and melted cheeses, perfect for a comforting meal.

Ingredients

Chicken

  • 2 large chicken breasts (bisected horizontally to yield 4 fillets)
  • 4 ounces cream cheese (softened to room temperature)
  • 3/4 cup heavy cream
  • 4 cloves garlic (finely minced)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/4 cup Parmesan cheese (freshly grated)
  • 3/4 cup mozzarella cheese (finely grated)
  • 8 ounces sun-dried tomatoes (well-drained and finely chopped (reserve the oil))
  • 3/4 cup fresh spinach (coarsely chopped)

Instructions 

  • Preheat oven to 400°F (204°C).
  • Slice chicken breasts in half, season with salt, pepper, and half the garlic. Arrange in a baking dish.
  • Mix cream cheese, heavy cream, remaining garlic, onion powder, paprika, Italian seasoning, salt, pepper, Parmesan, and half mozzarella until smooth. Spread over chicken, drizzle with tomato oil, and scatter sun-dried tomatoes.
  • Cover with foil and bake for 20 minutes. Remove, stir in spinach, top with remaining mozzarella, and bake uncovered for 10 minutes until cheese melts.

Notes

Ensure chicken is cooked to an internal temperature of 165°F (74°C).
