A moist and flavorful cake combining ripe bananas, crunchy walnuts, and creamy frosting, perfect for any celebration.

Ingredients

Cake Batter

  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1.5 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 4 ripe bananas, mashed
  • 1 cup buttermilk
  • 1.5 cups chopped walnuts

Frosting

  • 16 oz cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 8 oz white chocolate, melted and cooled
  • 0.25 cup heavy cream

Decoration

  • additional chopped walnuts for decoration

Instructions 

  • Preheat oven to 350°F (175°C). Grease and line two 9-inch pans.
  • Mix flour, baking soda, and salt. Beat butter and sugar until fluffy. Add eggs and vanilla, then fold in bananas.
  • Alternate adding flour mixture and buttermilk to batter. Fold in 1 cup walnuts. Divide into pans and bake 25-30 minutes.
  • Cool cakes, then prepare frosting by beating cream cheese and butter, adding powdered sugar, vanilla, and white chocolate. Fold in whipped cream.
  • Assemble cake with frosting between layers, cover with remaining frosting, and decorate with chopped walnuts.

Notes

For best results, use very ripe bananas for extra sweetness and flavor.
