A moist and flavorful cake combining ripe bananas, crunchy walnuts, and creamy frosting, perfect for any celebration.

Ingredients

Cake Batter

  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1.5 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 4 ripe bananas, mashed
  • 1 cup buttermilk
  • 1.5 cups chopped walnuts

Frosting

  • 16 oz cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 8 oz white chocolate, melted and cooled
  • 0.25 cup heavy cream

Decoration

  • additional chopped walnuts for decoration

Instructions 

  • Preheat oven to 350°F (175°C). Grease and line two 9-inch pans.
  • Mix flour, baking soda, and salt. Beat butter and sugar until fluffy. Add eggs and vanilla. Fold in bananas. Alternate adding flour mixture and buttermilk. Fold in 1 cup walnuts. Divide batter and bake for 25-30 minutes.
  • Cool cakes. Beat cream cheese and butter, then add powdered sugar, vanilla, and white chocolate. Whip heavy cream and fold into frosting. Assemble cake, frost, and decorate with remaining walnuts.

Notes

Ensure bananas are very ripe for best flavor. Chill the cake before serving for easier slicing.
