Beef and Sweet Potato Chili

A hearty and flavorful chili combining lean ground beef, sweet potatoes, and spices for a satisfying meal.

Ingredients

Oil

  • 1 tablespoon avocado oil

Meat

  • 1 pound lean ground beef (93/7)

Vegetables

  • 1 small yellow onion (diced)
  • 4 cloves garlic (minced)

Spices

  • 1.5 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon dried oregano

Liquids

  • 2 cups beef or chicken stock (unsalted)
  • 2 cups diced sweet potatoes
  • 1 bell pepper diced
  • 1 jalapeno pepper diced, removing seeds and membranes for less heat
  • 2 15 ounce cans fire roasted diced tomatoes
  • 1 15 ounce can dark red kidney beans (drained and rinsed)
  • 1 15 ounce can black beans (drained and rinsed)

Instructions 

  • Heat oil in a skillet, cook ground beef for 4-5 minutes until browned.
  • Add onion and sauté until translucent, then add garlic and spices, cooking for 30 seconds.
  • Transfer mixture to slow cooker, add remaining ingredients, stir, and cook on low for 3-4 hours.
  • Check for tenderness, adjust seasoning if needed, then serve.

Notes

For less heat, remove seeds from the jalapeno before dicing.
