0.25cupsalsa
0.25ozmild diced green chilies
6-8eachburrito-sized flour tortillas (10-12 inch)
2cupsCilantro Lime Rice or plain rice seasoned with lime, salt and pepper
2cupsblack beans or pinto beans, rinsed and drained
1recipechipotle sauce or sour cream or Greek yogurt
1portionguacamole, homemade or store-bought
1.5cupsshredded sharp or Monterrey Jack cheese
Instructions
Preheat oven to 400°F (200°C). Prepare a baking rack on a baking sheet and spray with cooking spray.
Cook the ground beef with chopped onion, garlic, chili powder, cumin, paprika, oregano, salt, pepper, cayenne, and salsa until beef is browned and fragrant.
Warm the tortillas and fill each with beef mixture, rice, beans, cheese, and desired toppings like guacamole and sauce.
Wrap the burritos tightly and place on the prepared baking rack. Bake for 10-15 minutes until cheese melts and tortillas are slightly crispy.
Serve hot with additional salsa, guacamole, and sour cream if desired.

For a vegetarian version, substitute the beef with sautéed vegetables or plant-based protein.
