Delicious homemade beef burritos packed with flavorful ingredients and easy to prepare for a satisfying meal.

Ingredients

Main Ingredients

  • 2 TBS olive oil
  • 1 each onion, chopped
  • 1 pound lean ground beef
  • 1 tablespoon chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.25 tsp pepper
  • 0.25 tsp cayenne pepper (more or less to taste)
  • 4 cloves garlic, minced (or 1 tsp powder)
  • 0.25 cup salsa
  • 0.25 oz mild diced green chilies
  • 6-8 each burrito-sized flour tortillas (10-12 inch)
  • 2 cups Cilantro Lime Rice or plain rice seasoned with lime, salt and pepper
  • 2 cups black beans or pinto beans, rinsed and drained
  • 1 recipe chipotle sauce or sour cream or Greek yogurt
  • 1 portion guacamole, homemade or store-bought
  • 1.5 cups shredded sharp or Monterrey Jack cheese

Instructions 

  • Preheat oven to 400°F (200°C). Prepare a baking rack on a baking sheet and spray with cooking spray.
  • Cook the ground beef with chopped onion, garlic, chili powder, cumin, paprika, oregano, salt, pepper, cayenne, and salsa until beef is browned and fragrant.
  • Warm the tortillas and fill each with beef mixture, rice, beans, cheese, and desired toppings like guacamole and sauce.
  • Wrap the burritos tightly and place on the prepared baking rack. Bake for 10-15 minutes until cheese melts and tortillas are slightly crispy.
  • Serve hot with additional salsa, guacamole, and sour cream if desired.

Notes

For a vegetarian version, substitute the beef with sautéed vegetables or plant-based protein.
