A hearty and flavorful stew featuring tender beef neck bones and fresh vegetables, perfect for a comforting meal.

Ingredients

Meat

  • 2–3 lbs beef neck bones

Vegetables

  • 1 large onion, chopped
  • 2 carrots carrots, sliced
  • 3–4 potatoes potatoes, cubed

Aromatics

  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes

Broth & Paste

  • 4 cups beef broth
  • 2 tbsp tomato paste

Spices

  • 2 tsp smoked paprika
  • 1 tsp thyme

Seasoning

  • to taste Salt and pepper

Instructions 

  • Brown the beef neck bones in a pot, then set aside.
  • Sauté onions, garlic, and carrots until softened.
  • Add bones, tomatoes, tomato paste, broth, spices, and potatoes; simmer for 2–3 hours.
  • Check for tenderness and serve garnished with parsley.

Notes

Use fresh parsley for garnish and adjust seasoning to taste.
