carrots (peeled and sliced into 1 inch pieces)

Thickening

Instructions
Heat oil in a large pot and brown the meat in batches. Set aside.
Add onions and cook until softened, then add garlic and cook for another minute.
Pour in beef broth, add tomatoes, Worcestershire, Liquid Smoke, tomato paste, spices, and meat. Simmer for 1-1.5 hours until tender.
Add carrots, celery, and potatoes. Cover and cook for 30 minutes.
Optional: Mix flour with broth and stir into the stew to thicken. Garnish with parsley if desired.
Notes
Adjust seasonings to taste before serving.
