A classic Russian dish featuring tender beef in a creamy mushroom sauce, served over noodles or potatoes.

Ingredients

Meat

  • 1 lb beef sirloin or tenderloin (thinly sliced)
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil or butter
  • 1 medium onion (diced)
  • 2 cups mushrooms (sliced (button or cremini))
  • 2 cloves garlic (minced)
  • 1 cup beef broth
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce

Garnish

  • 1 tbsp fresh parsley (chopped, optional)

Serving

Instructions 

  • Toss beef with flour and cook until browned, then set aside.
  • Sauté onions and mushrooms until softened and browned, then add garlic and cook briefly.
  • Pour in beef broth, stir in mustard and Worcestershire, simmer for 5 minutes.
  • Reduce heat, stir in sour cream, then add beef back and heat through for 2-3 minutes.
  • Serve over noodles, rice, or mashed potatoes, garnished with parsley if desired.

Notes

Use high-quality beef for best flavor and consider adding a splash of white wine for extra depth.
