Ingredients

  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small diced onion
  • 4 minced garlic cloves garlic cloves
  • 3 cups low-sodium beef broth
  • 0.5 cup milk
  • 1 cup shredded cheddar cheese
  • 0.5 cup grated Parmesan cheese
  • 3 tbsp butter
  • to taste Salt and pepper Salt and pepper

Instructions 

  • Melt 1 tablespoon of butter in a skillet and sauté diced onion until soft.
  • Add ground beef, cook until browned, then drain excess fat. Stir in garlic and cook 1 minute.
  • Pour in rice and beef broth, season with salt and pepper, bring to a boil, then cover and simmer 18-20 minutes until rice is tender.
  • In a separate saucepan, melt remaining butter, add milk, Parmesan, and cheddar, stirring until creamy.
  • Combine cheese sauce with cooked beef and rice, cook uncovered for a few minutes. Serve warm garnished with parsley if desired.

Notes

For extra flavor, add chopped fresh parsley or a dash of hot sauce.
