Ingredients

Dry Ingredients

  • 0.67 cup all-purpose flour
  • 0.33 cup light brown sugar
  • 0.25 teaspoon salt
  • 1 cup all-purpose flour
  • 0.75 teaspoon baking powder

Wet Ingredients

  • 0.5 cup vegetable oil
  • 0.75 cup granulated sugar
  • 1 large egg
  • 0.5 teaspoon vanilla extract
  • 0.5 cup Greek yogurt

Cream Cheese Filling

  • 6 oz cream cheese (room temperature)
  • 3 tablespoons granulated sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Berries

  • 1.5 cups fresh berries (blueberries and raspberries)

Glaze

  • ¾ cup powdered sugar
  • 1.5 to 2.5 milk or cream (gradually added)

Instructions 

  • Preheat oven to 425°F, line pan, and prepare crumb topping.
  • Mix cream cheese, sugar, salt, and vanilla for filling.
  • Combine dry ingredients, then fold in wet ingredients and berries.
  • Fill muffin cups with batter, add cream cheese, top with berries and streusel, then bake at 350°F for 30-35 minutes.
  • Cool muffins, then prepare glaze by mixing powdered sugar with milk and drizzle over muffins.

Notes

Use fresh berries for best flavor and texture.
