A quick and flavorful Chinese stir fry combining tender chicken with crisp vegetables in a savory sauce.
Ingredients
Chicken
1lbboneless, skinless chicken breast(sliced thin against the grain)
Vegetables
2cupsbroccoli florets(cut into uniform bite-sized pieces)
1cupbell peppers(Red and Green, sliced into strips)
0.5cupsnow peas(strings removed from edges)
Aromatics
1tbspfresh garlic(finely minced)
1tbspfresh ginger(grated)
Sauces and Broth
2tbsplight soy sauce
1tbspoyster sauce
0.25cuplow-sodium chicken broth
1tbspcornstarch
1tbspwater(for cornstarch slurry)
Instructions
Marinate sliced chicken in cornstarch, soy sauce, and a little water for 15-20 minutes.
Chop vegetables into uniform pieces. Preheat wok over high heat.
Cook chicken in hot oil until crusted, then remove. Stir-fry broccoli for 1 minute, add water if needed. Add bell peppers and snow peas, stir for another minute.
Push vegetables aside, add garlic and ginger, fry for 15 seconds. Return chicken to pan.
Mix sauce with cornstarch slurry, pour over ingredients, toss until thickened, then serve.
Notes
Use high-smoke-point oil like vegetable or peanut oil for best results.
