Delight in these soft, chewy cookies filled with creamy Biscoff spread and studded with white chocolate chips for a perfect treat.

Ingredients

Dough

  • 200 g Cold unsalted butter (Take out 30 minutes before baking)
  • 180 g Light brown sugar
  • 80 g White caster sugar
  • 2 large Eggs (at room temperature)
  • 250 g Self-raising flour
  • 150 g Plain flour
  • 0.5 tsp Salt
  • 1 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 300 g White chocolate chips
  • 10 heaped tsps Biscoff spread (roughly 3/4 of a jar)

Instructions 

  • Cream together the butter and sugars until light and fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Mix in flour, baking powder, cinnamon, and salt until combined.
  • Fold in white chocolate chips and dollop Biscoff spread into the dough.
  • Shape into balls, place on baking sheet, and bake at 180°C (350°F) for 10 minutes.

Notes

Ensure not to overbake for soft, chewy cookies.
