  • 1 cup grated carrots
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 2 eggs eggs
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts (optional) (optional)
  • 1/2 cup raisins (optional) (optional)
  • Cream cheese frosting (store-bought or homemade)

Instructions 

  • Preheat oven to 350°F (175°C) and grease mini muffin pan.
  • Mix grated carrots, flour, sugar, oil, eggs, baking powder, cinnamon, and salt until combined.
  • Fold in walnuts and raisins if using.
  • Fill muffin cups 2/3 full and bake for 12-15 minutes. Cool before frosting.
  • Top each cake with cream cheese frosting before serving.

Notes

For best results, use fresh grated carrots and high-quality frosting.
