Ingredients

Protein

  • 4 fillets tilapia fillets (about 1 lb total)
  • 1 tablespoon olive oil

Spices

  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)

Other

  • to taste Salt and black pepper
  • 2 cups cooked rice (white, brown, or cilantro-lime rice)
  • 1 each avocado (sliced)
  • 1/2 cup shredded cabbage or lettuce
  • 1/2 cup salsa or pico de gallo
  • 1/4 cup sour cream or Greek yogurt
  • for serving Lime wedges
  • Chopped optional fresh cilantro

Instructions 

  • Pat tilapia dry and mix spices in a small bowl.
  • Rub spice mix onto both sides of each fillet and cook in a skillet with olive oil for 3-4 minutes per side until blackened and cooked through.
  • Flake fish into chunks and assemble bowls with rice, fish, avocado, slaw, salsa, and sour cream. Garnish with lime and cilantro.

Notes

Adjust spice level to taste and serve immediately for best flavor.
