A flavorful and easy-to-make veggie fried rice cooked on a Blackstone griddle, topped with a savory stir fry sauce and fresh green onions.
Ingredients
Oil
2tablespoonsCanola Oil or Vegetable Oil(for greasing Blackstone griddle)
1mediumyellow onion(chopped into 1/2 inch squares)
10ozfrozen peas and carrots
1tablespoonminced garlic
4cupscooked white rice(day old, strongly preferred, from 2 cups dry)
2tablespoonslow sodium soy sauce
4green onionsthinly sliced green onions(divided)
to tasteGround Black Pepper
optionalRed Pepper Flakes
0.25cuplow sodium soy sauce
2teaspoonschili garlic sauce
2teaspoonsrice vinegar
2teaspoonsgrated or crushed fresh ginger
0.5teaspoonsesame oil
Instructions
Mix stir fry sauce ingredients in a jar or bowl and set aside.
Preheat griddle to Medium-High, add 1-2 tbsp oil, and cook onions until soft and browned, about 2-3 minutes.
Add peas and carrots, cook for 2 minutes, then add garlic and cook 30 seconds to 1 minute until fragrant.
Push veggies aside, turn off one burner, add beaten eggs, scramble briefly, then set aside with veggies.
Turn burners back to Medium-High, add more oil, stir in rice, and cook 1-2 minutes until warmed and lightly browned. Add soy sauce, then combine rice, veggies, eggs, and stir fry sauce with half the green onions. Serve topped with remaining green onions and sauce.
Notes
Use day-old rice for best texture and flavor. Adjust spice level with red pepper flakes as desired.
