These dairy-free, flourless banana muffins are quick to make and perfect for a healthy snack or breakfast.

Ingredients

Bananas

  • 3 medium ripe medium bananas

Oats

  • 2 cups old fashioned oats (*)

Eggs

  • 2 eggs eggs

Almond Milk

  • ¼ cup almond milk (*)

Honey or Maple Syrup

  • ¼ cup honey or pure maple syrup

Baking Soda

  • 1 teaspoon baking soda

Vanilla Extract

  • 1 teaspoon vanilla

Dairy-Free Chocolate Chips

  • 1/3 cup dairy free chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C). Prepare muffin tin.
  • Blend bananas, oats, eggs, almond milk, honey, baking soda, and vanilla until combined.
  • Add chocolate chips and briefly blend to mix.
  • Divide batter evenly into 12 muffin cups and bake for 15-17 minutes.
  • Cool muffins in pan for 10 minutes, then transfer to wire rack.
  • Muffins freeze well for up to 3 months.

Notes

Use ripe bananas for best flavor and sweetness.
