These delicious and healthy pancake bites are perfect for a quick breakfast or snack, packed with protein and bursting with blueberries.

Ingredients

Dairy

  • 0.5 cup cottage cheese
  • 2 large eggs
  • 1 ripe banana banana (optional for sweetness, skip for low-carb)
  • 1 cup oat flour (or almond flour for low-carb)
  • 1-2 tablespoons honey or maple syrup (optional, adjust sweetness)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch salt
  • 0.5 cup blueberries (fresh or frozen)

Instructions 

  • Blend cottage cheese, eggs, banana (if using), honey (if using), and vanilla until smooth.
  • Mix in oat flour, baking powder, and salt until combined.
  • Gently fold in blueberries.
  • Spoon batter into greased mini-muffin tin, filling ¾ full.
  • Bake at 350°F (175°C) for 18–22 minutes until golden and cooked through.
  • Cool briefly before serving warm.

Notes

For a lower-carb version, skip the banana and use almond flour.
