Ingredients

Dry ingredients

  • 0.75 cup all-purpose flour (for batter)
  • 0.75 cup light brown sugar
  • 0.25 teaspoon salt
  • 0.25 cup unsalted butter (melted)
  • 1 cup all-purpose flour (for dry mix)
  • 0.25 teaspoon salt
  • 1 teaspoon baking powder
  • 0.25 cup vegetable oil
  • 0.5 cup granulated sugar
  • 1 large egg
  • 0.5 teaspoon vanilla
  • 0.5 cup Greek yogurt

Blueberries

  • 0.75 cup fresh blueberries (for batter)
  • 1 Tablespoon flour (to toss blueberries)
  • 0.75 cup blueberries (for topping)

Cream Cheese Filling

  • 6 oz cream cheese (room temperature)
  • 3 Tablespoons granulated sugar
  • 1 teaspoon vanilla
  • 1 teaspoon corn starch
  • 0.75 cup powdered sugar
  • 1 ½ - 2 ½ teaspoons milk or cream (adjust for glaze consistency)

Instructions 

  • Preheat oven to 425°F, line muffin tin with liners.
  • Divide blueberries, toss half with flour for batter, reserve the rest for topping.
  • Mix dry ingredients, add melted butter to make streusel topping.
  • Combine wet ingredients, then fold in dry ingredients and blueberries.
  • Fill muffin cups with batter, add cream cheese, blueberries, and streusel on top. Bake at 350°F for 22-25 minutes.
  • Cool muffins, prepare glaze with powdered sugar and milk, then drizzle over muffins before serving.

Notes

For best results, use fresh blueberries and ensure cream cheese is at room temperature for easy mixing.
