A delicious and hearty breakfast quesadilla filled with scrambled eggs, ground turkey, and cheese, perfect for a quick morning meal.

Ingredients

  • 4 pieces large flour tortillas
  • 1 pound ground turkey
  • 2 cups shredded Colby Jack cheese
  • 6 eggs eggs
  • 1/2 cup milk
  • to taste Salt and pepper

Instructions 

  • Cook ground turkey in a skillet until browned, then set aside.
  • Whisk eggs, milk, salt, and pepper in a bowl.
  • Scramble eggs in the skillet until just set.
  • Lay tortillas flat, add eggs, turkey, and cheese on half, then fold.
  • Cook folded quesadillas 2-3 minutes per side until golden, then slice and serve.

Notes

For extra flavor, add chopped cilantro or hot sauce.
