Instructions
Cook sausage in a skillet until browned, then set aside.
Whisk eggs, milk, salt, and pepper; scramble in the same skillet.
Lay tortillas flat, spread scrambled eggs on half, add sausage and cheese, then fold.
Cook folded quesadillas in a skillet until golden and crispy, about 2-3 minutes per side.
Slice into wedges, serve with salsa, sour cream, and green onions.
