A delicious and hearty breakfast quesadilla filled with turkey sausage, eggs, and cheese, perfect for a quick morning meal.

Ingredients

Dough

  • 4 large flour tortillas
  • 1 pound ground turkey sausage
  • 2 cups shredded Colby Jack cheese
  • 6 eggs eggs
  • 0.5 cup milk
  • to taste Salt and pepper
  • Sliced green onions green onions (for garnish)
  • Salsa salsa (for serving)
  • Sour cream sour cream (for serving)

Instructions 

  • Cook sausage in a skillet until browned, then set aside.
  • Whisk eggs, milk, salt, and pepper; scramble in the same skillet.
  • Lay tortillas flat, spread scrambled eggs on half, add sausage and cheese, then fold.
  • Cook folded quesadillas in a skillet until golden and crispy, about 2-3 minutes per side.
  • Slice into wedges, serve with salsa, sour cream, and green onions.

Notes

For extra flavor, add some chopped cilantro or hot sauce.
