A creamy and comforting broccoli cheese soup perfect for a cozy meal. Made with fresh broccoli and sharp cheddar, it's easy to prepare and full of flavor.

Ingredients

butter

  • 6 Tbsp butter (cut into 1 Tbsp pieces)

vegetables

  • 1 cup finely chopped yellow onion
  • 1 large clove garlic (finely minced)

flour

  • 1/4 cup + 3 tbsp cup all-purpose flour

liquids

  • 3 1/4 cups low-fat milk (then more to thin if desired)
  • 1 can (14.5 oz) low-sodium chicken broth
  • 1/2 cup heavy cream

vegetables

  • 3 cups finely chopped fresh broccoli florets (packed)

cheese

  • 10 oz sharp cheddar cheese (or extra sharp cheddar, plus more for serving)
  • 1 oz finely shredded Parmesan cheese

seasoning

  • to taste salt and freshly ground black pepper

Instructions 

  • Melt butter in a pot over medium-high heat. Add onions and cook until soft, about 4-5 minutes.
  • Add garlic and flour; cook for 1 minute while stirring.
  • Whisk in milk and chicken broth; add broccoli. Cook until thickened and broccoli is tender, about 6-8 minutes.
  • Remove from heat; stir in heavy cream, cheddar, and Parmesan until melted. Season with salt and pepper.

Notes

For a thinner soup, add more milk before serving.
