Ingredients

Cauliflower

  • 1.5 lbs cauliflower (cut into bite-sized florets)
  • 0.5 cup buffalo sauce (adjust based on heat preference)
  • 4 whole whole grain or gluten-free tortillas
  • 2 cups fresh lettuce (e.g., romaine or iceberg)
  • 0.25 cup yogurt-based ranch dressing (or dairy-free alternative)
  • 1 cup assorted vegetables (bell peppers or carrots, sliced (optional))

Instructions 

  • Preheat oven to 450°F (232°C).
  • Toss cauliflower florets with buffalo sauce until coated.
  • Roast cauliflower on a parchment-lined sheet for 20-25 minutes until crispy.
  • Lay out tortillas, add lettuce, roasted cauliflower, vegetables, and drizzle with dressing.
  • Roll up tortillas tightly and slice in half to serve.

Notes

For extra crunch, broil the cauliflower for an additional 2 minutes after roasting.
