Enjoy a flavorful and easy-to-make buffalo chicken flatbread, perfect for a quick appetizer or meal.

Ingredients

Dough and Base

  • 4 pieces pita bread (naan also works)
  • ½ cup buffalo sauce
  • 1 cup shredded Mozzarella cheese

Chicken and Toppings

  • 2 cups shredded rotisserie chicken
  • 2 green onions (white and green parts) thinly sliced
  • 1 celery rib thinly sliced
  • ½ cup plain Greek yogurt (non-fat or full fat)
  • 1 tsp Dijon mustard
  • 1 - 2 tsp lemon juice
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried dill
  • ¼ tsp black pepper
  • ½ tsp salt
  • 2 - 3 tbsp water

Instructions 

  • Preheat oven to 400°F (200°C) and line baking sheets with parchment paper.
  • Mix all dressing ingredients to make ranch; taste and adjust seasonings.
  • Bake pitas for 3-4 minutes, then remove from oven.
  • Toss shredded chicken with buffalo sauce. Spread ranch and buffalo sauce on pitas, then top with cheese, chicken, and green onions.
  • Bake for 7-10 minutes until golden and cheese melts. Garnish with extra ranch, buffalo sauce, green onions, and celery.

Notes

For extra flavor, add more cheese or green onions as desired.
