A flavorful and creamy pasta salad with spicy buffalo chicken, perfect for a quick lunch or picnic.

Ingredients

Pasta

  • 8 oz rotini pasta (or any pasta of choice)

Cooked chicken

  • 2 cups cooked chicken (shredded or diced)

Vegetables

  • 1 cup celery (diced)
  • 1 cup red bell pepper (diced)
  • 1 cup green onions (sliced)

Sauces and dressings

  • 1/2 cup buffalo sauce (adjust to taste)
  • 1/2 cup ranch dressing (or blue cheese dressing)

Other ingredients

  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt (to taste)
  • 1/4 tsp black pepper (to taste)

Instructions 

  • Cook the pasta according to package instructions, then drain and set aside.
  • In a large bowl, combine cooked pasta, shredded chicken, diced vegetables, and sliced green onions.
  • In a small bowl, mix buffalo sauce, ranch dressing, olive oil, garlic powder, onion powder, salt, and black pepper.
  • Pour the sauce mixture over the pasta and chicken mixture, tossing to coat evenly.
  • Chill in the refrigerator for at least 30 minutes before serving for best flavor.

Notes

Adjust buffalo sauce to spice preference and refrigerate leftovers promptly.
