Delicious and spicy buffalo chicken quesadillas perfect for a quick snack or meal.

Ingredients

Chicken and Sauce

  • 3 cups cooked chicken (shredded)
  • 1/2 cup buffalo sauce
  • 2 Tablespoons ranch dressing
  • 1/2 teaspoon Salt
  • 1/2 teaspoon black pepper
  • 2 cups colby jack cheese (shredded)
  • 4 large Flour Tortillas (burrito size)
  • 2 Tablespoons Butter (divided)

Instructions 

  • Mix shredded chicken, buffalo sauce, ranch dressing, salt, and pepper in a bowl.
  • Layer tortillas with cheese, chicken mixture, and cheese; fold in half.
  • Heat skillet; melt 1 tablespoon butter.
  • Cook quesadillas 1-2 minutes per side until golden and cheese melts.
  • Repeat with remaining quesadillas; cut into 4 pieces each and serve.

Notes

Use a non-stick skillet for easier flipping.
