Spicy, cheesy, and satisfying, these buffalo chicken quesadillas are perfect for a quick lunch or dinner with bold flavors and crispy texture.
Ingredients
Chicken

cooked chicken (breast or thighs), shredded

buffalo sauce

pepper jack cheese, shredded

sharp cheddar cheese, shredded

Instructions
Cook the chicken until fully cooked, then shred it.
Mix buffalo sauce with lime juice and salt, then toss shredded chicken in the mixture.
Place cheese on half of a tortilla, add buffalo chicken, top with more cheese, then fold.
Cook in a skillet with butter/oil for 3-4 minutes per side until golden and crispy.
Flip and cook until golden, then rest before slicing.
