Spicy, cheesy, and satisfying, these buffalo chicken quesadillas are perfect for a quick lunch or dinner with bold flavors and crispy texture.

Ingredients

Chicken

  • 2 cups cooked chicken (breast or thighs), shredded
  • 1/2 cup buffalo sauce
  • 1/2 cup pepper jack cheese, shredded
  • 1/2 cup sharp cheddar cheese, shredded
  • 4 large flour tortillas
  • 1 tablespoon butter or oil for cooking
  • Fresh herbs (cilantro or green onions) for garnish
  • Ranch or blue cheese dressing for serving

Instructions 

  • Cook the chicken until fully cooked, then shred it.
  • Mix buffalo sauce with lime juice and salt, then toss shredded chicken in the mixture.
  • Place cheese on half of a tortilla, add buffalo chicken, top with more cheese, then fold.
  • Cook in a skillet with butter/oil for 3-4 minutes per side until golden and crispy.
  • Flip and cook until golden, then rest before slicing.

Notes

Use cooked, shredded chicken for best flavor and texture.
