A flavorful and healthy stuffing made with bulgur wheat, sage, and fresh ingredients, perfect for roast dinners.

Ingredients

  • 120 g uncooked coarse bulgur wheat, rinsed
  • 360 ml chicken or vegetable stock
  • 300 g extra lean ground chicken (mince) - 5% fat
  • 1 small onion, finely diced
  • 1 apple peeled and grated apple
  • 1 large egg
  • Handful fresh sage, finely chopped
  • to season Salt and black pepper

Instructions 

  • Spray a pan with olive oil and fry the diced onion until softened. Set aside.
  • Combine bulgur wheat and stock in a saucepan, bring to boil, then simmer covered for 10-15 mins. Fluff and cool.
  • Preheat oven to 180°C (fan) or 200°C. Mix cooled bulgur, ground chicken, onion, grated apple, egg, and sage. Season well.
  • Form mixture into 16 balls or place in an ovenproof dish. Place on a tray lined with parchment.
  • Spray the balls or dish with olive oil and bake for 30 mins until golden and cooked through.

Notes

This stuffing pairs beautifully with roast meats and can be prepared ahead of time.
