A quick and hearty dish combining ground beef, rice, and shredded cabbage for a comforting meal in one bowl.

Ingredients

Vegetables and Aromatics

  • 6 cloves garlic
  • 1 piece onion (any color)
  • 6 cups cabbage (shredded) (packed)
  • 1 lb ground beef (lean)
  • 3 Tbsp olive oil (split)
  • 1 cup long grain white rice
  • 1 1/4 cups low sodium chicken broth
  • 1 1/4 cups tomato sauce
  • 1 tsp smoked paprika (or regular paprika)
  • 1 tsp Italian seasoning
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp apple cider vinegar
  • 1 tsp kosher salt (split)
  • 1 tsp pepper (split)

Garnish

  • to taste minced fresh herbs (chives or parsley) (optional)

Instructions 

  • Mince garlic and onion. Shred cabbage. Sauté garlic and onion in 2 Tbsp olive oil until fragrant.
  • Add ground beef with salt and pepper; cook until browned. Stir in paprika and Italian seasoning.
  • Toast rice in 1 Tbsp olive oil, then add broth and tomato sauce. Simmer covered for 16-18 minutes until rice is al dente.
  • Mix cooked cabbage into beef, add Worcestershire and vinegar, then combine with cooked rice. Garnish with herbs if desired.

Notes

You can add chicken broth to loosen the mixture if needed. Garnish with fresh herbs for extra flavor.
