Ingredients

Salmon

  • 4 fillets salmon fillets (about 5 to 6 ounces each)
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1.5 cups corn kernels (fresh or thawed frozen)
  • 0.5 cup diced red bell pepper
  • 0.25 cup finely diced red onion
  • 2 tablespoons chopped cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon olive oil
  • 0.25 teaspoon salt

Instructions 

  • Mix paprika, garlic powder, onion powder, oregano, thyme, salt, and black pepper.
  • Rub salmon with olive oil and coat with seasoning.
  • Cook salmon in a skillet for 3-4 minutes per side until done.
  • Combine corn, red bell pepper, onion, cilantro, lime juice, olive oil, and salt for salsa.
  • Rest salmon briefly, then top with corn salsa and serve.

Notes

For extra flavor, let the salmon rest a few minutes before serving.
